Whole Wheat Zucchini Pizza!
The vegetables atop a thin crispy wrap is very satisfying, especially with the melted cheese all over it. A great nutritious lunch. The best part? It takes just a couple of minutes to whip together.

Ingredients
  • 4 Whole Wheat 6 inch wraps
  • 4 ounces J&J whipped cream cheese
  • ½ teaspoon garlic powder
  • Dash of red pepper flakes (optional)
  • 1 small zucchini
  • 1 small yellow squash
  • 1 cup Cherry tomatoes, halved
  • Salt & pepper, to taste
  • 1 cup Mehadrin shredded pizza cheese

The vegetables atop a thin crispy wrap is very satisfying, especially with the melted cheese all over it. A great nutritious lunch. The best part? It takes just a couple of minutes to whip together.

Instructions

 

Preheat oven to 350.

Combine the cream cheese with the garlic powder and red pepper flakes.

Cut the zucchini and squash in half lengthwise, then into thin slices. Toss the cut squash and cherry tomatoes with salt & pepper.

Smear about 1 teaspoon of the cream cheese mixture in the center of each wrap.

Place the cut zucchini, yellow squash and cherry tomatoes on top. Top with a handful of cheddar and mozzarella cheese.

Bake for 10 minutes, until wrap is crispy and cheese melted.
